商用厨房空气品质的控制

摘    要:研究了商用厨房环境的空气品质,阐明了补风对排风罩性能的影响。应用CFD专业软件airpak2.0来模拟商用厨房的环境情况,并辅以实验验证,并揭示了热羽从烹饪区上升到排风罩的复杂流动情况。天花板顶部补风方式中,油烟容易从排风罩的上部溢入厨房大空间,而气幕式补风方式则从排风罩下部溢入大空间。综合比较两种补风方式,天花板顶部补风方式比气幕式补风对排风罩捕获能力的影响较小,这有助于实现商用厨房建筑的最优化通风设计。

The control of air quality in commercial kitchen

Abstract:The paper reports a study of indoor air quality in a simulated kitchen environment.The report illustrates the influence of makeup air on exhaust hood performance.Computational fluid dynamics and professional software(Airpak 2.0) were used to explore the condition in the commercial kitchen and to assist with experimental design.This simulation reveals a complex flow situation that can rise when the thermal plume from the cook top interacts with the exhaust hood.The paper shows the differences of airflow pattern between air curtain local supply and ceiling makeup air supply.From the compared results,it is found that the ceiling makeup air supply style may spill out to the space of the kitchen at the upper of the oil fume hood while the air curtain makeup air supply style may do that at the lower of the hood.In general,the influence of ceiling makeup air supply style on the capture and contain capability of the wall-mounted oil fume hood is less than the air curtain makeup supply style.The report helps engineers to achieve the optimization of kitchen ventilation system design.
