刺槐豆胶漂白增稠工艺及其机理研究

摘    要:分别以次氯酸钠、二氧化氯和双氧水作为漂白剂漂白加工刺槐豆胶粉,讨论了反应pH值、漂白剂用量、反应时间、反应温度对胶粉色泽及粘度的影响,通过正交试验确定了能使漂白胶粉粘度增大的最佳工艺参数。结果表明,在pH=2.5的条件下3种漂白剂能使胶粉的粘度提升幅度最大,产品粘度较原胶粉分别提高了35.3%,23.5%和7.4%。探讨了胶粉增稠机理:酸性条件下,胶粉分子在漂白剂的作用下生成缩醛交联,进而使产品粘度升高。

Abstract:Sodium hypochlorite,chlorine dioxide and hydrogen peroxide were used respectively as the bleaching reagents to deal with the locust bean gum.The influence factors such as reaction pH value,quantity of the bleacher,reaction time and reaction temperature were studied.Finally,the optimum conditions for bleaching technics that could improve the viscosity of the bleaching gum were found by using orthogonal experiment.The results showed that the largest viscosity increases occurred in the condition of pH=2.5,whic...
