摘    要:构建了电子鼻检测系统,用于绍兴黄酒总糖含量的快速预测,采用具有8种气体传感器的电子鼻系统检测了元红、花雕、善酿、香雪4种经典黄酒样品,同时实验检测了黄酒样品的总糖含量,采用非线性双重叠加随机共振提取电子鼻检测数据的特征值,采用特征值结合黄酒样品总糖含量检验结果建立了总糖含量预测模型.该模型不但可以预测黄酒样品的总糖含量,而且可以实现黄酒样品的类型检测.该方法在黄酒品质分析领域具有广阔的应用前景.

Abstract:Electronic nose system was designed and fabricated. Shaoxing rice wine total sugar content forecasting method using electronic nose was investigated.The electronic nose consisting of eight gas sensors was used to analyze four classic rice wine products:Yuanhong,Huadiao,Shanniang,and Xiangxue. Meanwhile,total sugar content index of rice wine products was examined.Non-linear cascaded double-layered stochastic resonance method was utilized to ex-tract electronic nose measurement data eigen values. Rice wine total sugar content forecasting model was built using eigen value and total sugar content data. The developed model could not only predict total sugar content of the sam-ples,but detect rice wine species. This method is promising in rice wine quality analysis field.
