摘    要:目的综述活性包装技术在果蔬保鲜上的应用和发展,为进一步开发活性包装技术在果蔬保鲜中的应用提供研究基础。方法针对我国目前果蔬贮运存在的问题,介绍活性包装的分类及其在果蔬保鲜方面的应用。结果活性包装在抗菌、脱氧、乙烯吸附、二氧化碳控制等方面已经取得了一定的研究成果,并可用于果蔬保鲜领域。结论活性包装具有可调节包装内产品所处环境,进而更好地保存产品等优点,从而成为保鲜包装的热点,在果蔬保鲜方面的应用具有重要的现实意义。

Abstract:The work aims to review the application and development of active packaging technology in preservation of fruits and vegetables to provide the foundation for the research on the application of the further developed active packaging technology in preservation of fruits and vegetables. Targeting at the existing problems in preservation of fruits and vegetables in China, this review briefly described the classification and application of active packaging on the preservation of fruits and vegetables. Some research achievements of active packaging system had been acquired in the fields of antibacterial, deoxygenation, ethylene adsorption, control of carbon dioxide and so on, which could be applied in preservation of fruits and vegetables. Active packaging is characterized by such advantages as regulating the environment where the products were packaged, thus better preserving the products. Because of that, it has become the hot spot of preservation packaging and provides important practical significance for its application in fruit and vegetable preservation.
