| 摘 要： | 本文对陈列柜内冷藏食品的干耗问题进行了研究.文中从理论上分析了冷藏食品的干耗机理;并具体分析了冷藏食品本身的特性、柜内冷藏环境及外界环境三个方面的因素对柜内冷藏食品干耗的影响;最后提出了降低柜内食品干耗的一些具体措施.本文的研究结果对于解决陈列柜内冷藏食品的干耗问题有实际的指导意义.

| Abstract: | In this paper, the problem of weight loss of foods in display cases has been re-seached. We analyzed the mechanism of the weight loss of foods on theoretics. And we analyzed the effect factors of weight loss which are characteristic of foods, condition in displaycases and air environment. We put forward some practical measures for lessing the weight loss of foods in display cases finally. Our research work will provide guidance to the problem of weight loss of foods in display cases. |
