摘    要:酒厂的原酒都带有不应含的机械杂质。机械杂质不仅影响白酒的透明度 ,也影响白酒的香和味和纯净性等。必须把它们尽可能多地从白酒中除去。豉香白酒经硅藻土机过滤后 ,酒的理化、口感、香味损失甚微 ,保留了原酒的风味

Abstract:the original wine sometimes contain some mechanical impurity.It not only would cause to turbidity,but also would influence on the scent,taste of the original wine.So it is very necessary to remove the mechanical impurity from wine.The paper introduced the application of diatomite filters in fermented soya bean flavor type plain wine systemically.The result show the diatomite filter could improve the wine's scent,taste and favor component.
