摘    要:针对当前猪肉安全问题,通过对生猪养殖和屠宰环节的调研,分析猪肉安全现状和存在问题,论述产生猪肉安全问题的根源并提出其解决办法:建立安全风险评估体系;制定与国际接轨又适合国情的法律标准体系;建立廉洁高效的行政执法体系、检验检疫体系和官方兽医体制;健全沟通机制和溯源体系;落实猪肉安全责任,促进行业可持续发展和社会和谐稳定.

Abstract:The current safety issues of pork in live pig breeding and slaughtering were evaluated and possible solutions were presented as follows: establishing the safety risk assessment system; formulating the laws and standards in line with both the international and domestic practices; establishing and improving a food safety supervision and administration coordination mechanism; and carrying out the safety responsibility system.
