摘    要:为了解雀嘴茶的营养成分组成及含量,分析测定了雀嘴茶氨基酸、矿质元素及其他营养成分,并进行了营养评价.结果表明,雀嘴茶含有17种氨基酸,其配比为E/(E+N)=0.4,E/N=0.6,蛋氨酸+胱氨酸为雀嘴茶的第一限制性氨基酸,天门冬氨酸和谷氨酸等鲜味氨基酸含量丰富,占氨基酸总量的27%以上;含有10种常量和微量元素,常量...

Abstract:The amino acids,mineral elements and other nutritional components were determined to study the composition and contents of nutritional components in Vaccinium dunalianum Wight.The results showed that the samples were hydrolyzed into 17 kinds of amino acid,E/(E+N)=0.4,E/N=0.6,met+cys being of the first limiting amino acid and in rich of tasty amino acids;The samples were in rich of mineral elements.The contents of quantity elements from rich to low was as follows: K>Ca>Mg>Na.The samples contained several kinds of nutritional components,including flavonoid,cellulose,Vitamin C and sugars.The contents of flavonoid were up to 20%.
