微胶囊脱氢乙酸钠在面包生产中的应用

摘    要:研究了喷雾冷凝法制备的微胶囊脱氢乙酸钠在面包制品中的应用.结果表明:相对于单体脱氢乙酸钠,微胶囊产品可缩短面包醒发时间20~30min;可增加面包比容1~1.5mL/g;可提高脱氢乙酸钠在成品面包中的有效存留率10~15%;面包的防霉保质时间可延长3~5倍.

Abstract:The microencapusle sodium dehydroacetate was prepared by the spray-cooling and its application in the bread products was studied.The results showed that: compared to dehydrogenation of acetate monomer,microcapsule products can reduce the bread proofing time by 20~30 min,increase the bread specific volume by 1~1.5 mL/g and improve the residual rate of sodium dehydroacetate by 10~15%.And the shelf life of the bread was extended by 3~5 times.
