摘    要:简要介绍了黄曲霉毒素的分子结构、理化性质、对人体健康的危害及黄曲霉毒素B1在食品中的限量标准。重点阐述了近几年黄曲霉毒素B1生物脱毒方面的进展,其中微生物主要通过吸附和降解两方面去除黄曲霉毒素B1。

Abstract:The chemical structure,physical and chemical properties of aflatoxin,as well as its hazard to human health and limits in food are briefly introduced.The development of biological detoxification in recent years is reviewed significantly.Aflatoxin B1 is mostly removed by sorption and degradation for microorganism.
