摘    要:γ-射线辐照作为淀粉改性的一种物理方法,具有经济、环保、高效、方便可行的优点。综述了γ-射线辐照对淀粉分子结构(淀粉分子量、直链淀粉含量、淀粉分子基团)、颗粒特性(淀粉颗粒形貌、淀粉结晶结构)和理化性质影响的国内外研究进展,对今后在该领域的进一步研究提出了看法,为推动辐照改性淀粉的研究提供参考。

Abstract:Adopting γ- ray radiation as a kind of physical methods to modify starch has proven to be eco - friendly, high efficient, convenient and low costs. The research progress on the effect of γ- ray radiation to molecule structure, including starch molecular weight, the content of amylose and starch molecular groups, to identity of granule, including granule feature and its crystal structure, and to physic - chemical properties was summarized. The opinion of further studies on the subject was proposed which provided ref- erence for starch modification by radiation.
