莱芜市73家“学生小饭桌”卫生状况调查

摘    要:目的了解莱芜市学生小饭桌卫生状况。方法按照统一自制调查表对73家学生小饭桌进行一般卫生学调查;依照随机抽样的原则,对工用具及餐(饮)具大肠菌群污染状况进行调查。结果学生小饭桌整体卫生状况较差。食品卫生许可证办证率46.57%,食品从业人员健康培训合格证持有率87.85%。食品从业人员文化水平较低,初中(含初中)以下学历占69.16%。台帐建档率72.6%,原料索证率低。从抽检结果来看,菜勺、成品菜盆、学生用托盘、水杯大肠菌群检出率较高,分别为50.68%、49.32%、46.58%和41.57%。结论调查结果提示加强食品卫生知识宣传培训,强化卫生监督,做好技术指导,是提高学生小饭桌卫生状况的关键。
