摘    要:为比较FRAP(ferricreducing antioxidantpower)法和ORAC(oxygenradicalabsorbancecapacity)法测定抗氧化活性的异同 ,用这两种方法测定了 9种坚果类食物的抗氧化活性。FRAP法测定结果显示 ,9种坚果类食物的还原活性排序为葵花子 >核桃 >花生 >白果 >栗子 >莲子 >榛子 >松子 >南瓜子 ,最强与最弱相差 6 81 4倍 ;ORAC法测定结果与FRAP法测定结果高度相关 (r =0 975 4,P <0 0 1) ,但是 ,食物的抗氧化活性排序有所差异 ,最强与最弱仅相差 9 2倍。进行抗氧化研究时应注意两种方法的差异。

Abstract:To define the difference between ferric reducing/antioxidant power (FRAP) assay and oxygen radical absorbance capacity (ORAC) assay for determination of antioxidizing capacity of nuts,nine kinds of nuts commonly consumed by Chinese were determined by the two methods. The results of FRAP assay showed that the order of antioxidizing capacity from the highest to the lowest was sunflower seed ,walnut,peanut,gingko,Chinese chestnut,lotus seed,hazelnut,pine nut and pumpkin seed. The highest value was 681.4 times higher than the lowest. The values obtained by ORAC were correlated positively with those obtained by FRAP. However,the ranking order based on ORAC values was different from that based on FRAP values with the highest value only 9.2 times higher than the lowest. The result suggests that attention should be paid to the difference between the two methods when they are used to study the antioxidant capacity of foodstuffs.
