摘    要:对不同来源的木瓜蛋白酶用三种不同方法测定其活性,结果表明从酪蛋白为底物的紫外分光光度法操作简便、成本低廉,适于酶纯化过程中的活性比较和木瓜蛋白酶系统产品及国内商品酶的活性测定;以BAEE为底物的光学法反应稳定,重复性好,适于酶学性质的理论研究和出口商品酶的活性测定;以酪蛋白为底物的茚三酮显色法,虽然操作烦琐,但所需仪器简单,测定结果误差较小,因此在条件简陋的地区也可以来用此法测定木瓜蛋白酶的活性。

Abstract:Different sources of papain were used to analyse enzyme activity.It showed that the operation of UV spectrometry was simpler with the lower cost.It was suitable to analyse enzyme activities in purified procedures,papain industrial products and food enzymes.Ninhydrin reaction was relatively complicated,but required simple equipment,it could be applied in non-development areas.BAEE detection had a good stability and reproducibility,which was fit to theoretically research on enzymatic characteristics and determine activities of reagent enzymes.
