| 摘 要： | 通过对固态发酵酒醅上甑过程不同操作手法的研究,对不同操作细节进行了描述和命名。并且把不同上甑过程与蒸馏效果进行对比,发现新蒸原酒品质出现差异。最终总结出"驿酒上甑八招式"在车间推而广之,起到了不错效果。肯望业界同仁商榷斧正。
