摘    要:西凤酒作为老牌四大名酒之一,近年来,为了提高产品质量,保障食品安全,对产品工艺不断传承和创新,推出“陈年凤香型、凤香型和绵柔凤香型”等特色凤型产品。通过成立“中国酿酒原料及品质安全研究院”、改进提高传统酿酒技艺、设置质量控制“七大关卡、五十五道防线”和建立CMA资质认定、CNAS认可实验室,全方位提高产品质量,保障食品安全,为名酒振兴持续发力。

Abstract:Xifeng liquor is one of the four famous old brands.In recent years,in order to improve product quality and ensure food safety,we have been carrying on and innovating the product technology,and launched Phoenix products with characteristics such as"aged Phoenix flavor,Phoenix flavor and soft Phoenix flavor".Through the establishment of"China Academy of brewing raw materials and quality safety",improvement and improvement of traditional brewing technology,setting up of"seven levels and fifty-five lines of defense"for quality control,and establishment of CMA qualification and CNAs accreditation laboratory,the product quality will be improved in all aspects,food safety will be guaranteed,and continuous efforts will be made for the revitalization of famous liquor.
