玉米花粉复合酶解破壁工艺条件研究

摘    要:玉米花粉含有丰富的营养物质和生物活性成分。在单因素试验的基础上,利用四因素三水平正交试验设计,研究了玉米花粉复合酶解破壁的工艺条件。结果表明,玉米花粉复合酶解破壁的最佳工艺条件为:酶添加量为7.5%(纤维素酶:果胶酶=1:1)、酶解温度50℃、pH5.0、酶解时间9h,在此工艺条件下,玉米花粉破壁率为41.78%。

Abstract:Maize pollen are rich in nutrients and bioactive components. The wall-broken technology of maize pollen by composite enzy matic hydrolysis was investigated by orthogonal experimental design. The optimal technology conditions were enzyme concentration ( cellulose : pectinase = 1 : 1 ) 7.5% , temperature 50℃, pH 5.0, and time 9 h. Under the optimal technology conditions, the rate of wallbroken of maize pollen was 41.78%.
