摘    要:辣椒红色素是一种优质天然类胡萝卜素,广泛应用于食品、医药、保健品、化妆品及嗜好品工业中。本文综述了辣椒红色素的理化特性,提取、分离纯化、分析测定等方法及应用前景。

Abstract:Capsicum red pigment was regarded as a kind of very useful nature pigment which had been widely used in food additives , medicine , health protection products and cosmetics. In this paper , the main methods of extraction, separation, analysis and application prosperity were presented.
