大豆蛋白降胆固醇作用最佳剂量探讨

摘    要:目的:探讨大豆蛋白降胆固醇作用适宜剂量。方法:4周龄健康雄性Wistar大鼠经2w诱发高血胆固醇后,将32只大鼠随机分为4组,分别给予10%大豆蛋白、15%大豆蛋白、20%大豆蛋白和20%酪蛋白,4w后采血测定血清TC、TG、HDL-C和LDL-C浓度。数据用SPSS统计软件进行方差分析。结果:经2w诱导高脂模型后,高胆固醇模型大鼠的TC浓度是阴性对照组的2.7倍。给以处理因素4w后,与20%酪蛋白组相比,15%和20%大豆蛋白组大鼠血清TC降低,但无统计学意义;15%大豆蛋白组大鼠血清TC、HDL-C和LDL-C浓度显著低于10%大豆蛋白组(P0.05);20%大豆蛋白组大鼠血清TG浓度显著低于10%大豆蛋白组(P0.05)。结论:4w内15%大豆蛋白和20%大豆蛋白具有相同的降低血浆胆固醇的趋势,10%大豆蛋白无降低胆固醇的作用。

Abstract:Objective]To investigate optimal dosage of soybean protein on lowing total cholesterol in serum in rats with hypereholester- olemia. Method] Healthy male Wistar rats were fed with high fat diet and were induced to hypereholesterolemia model successfully after 2 weeks. 32 rats were randomly divided into 4 groups, there were treatments for each group with high fat diet eontaining 10% soybean protein, 15% soybean protein, 20% soybean protein and 20% casein respectively. Blood samples were collected at tire end of the 4^th week and the levels of TC, TG, HDL-C and LDL-C in serum were determined. Analysis of variance was performed to the results of the experiment with the SPSS. Result] After 2 weeks induction of hypercholesterolemia, the serum TC levels of experimental rats was increased by nearly 2. 7 times as compared with that of control rats fed with normal diet. After 4 weeks treatments, compared with 20% casein, serum levels of TC in 15%, and 20% soybean protein were not significantly reduced; compared with 10% soybean protein, serum levels of TC, HDL-C and LDL-C were significantly decreased in 15% soybean protein (P 〈0.05), and serum levels of TG was also decreased in 20% soybean protein ( P 〈 0. 05) . Conclusion] Soybean protein has trend to decrease the concentration of serumTC in 15% and 20% soybean protein, hut sorem levels of TC were not influenced by 10% soybean protein in 4 weeks.
