桑叶的主要成分、功能及其在食品中的应用

摘    要:为对进一步开发利用桑叶提供参考,介绍了桑叶中所含有的生物碱及黄酮类、多糖、氨基酸、微量元素、维生素和植物甾醇等主要成分,同时综述了桑叶的降血糖作用、降血压作用、降血脂作用、抗氧化作用、对凝血机制的影响、防癌和提高免疫力作用、抗炎消肿作用、对神经系统机能衰老的延缓作用及其它作用等主要功能,并进一步介绍了桑叶在食品和医药中的应用状况。

Abstract:In order to offer considerations for the exploitation of mulberry leaf, the main ingredients and functions of mulberry leaf are introduced. The ingredients of mulber37 leaf include : alkaloids, ftavonoids, polysaccharide, amino acids ,trace elements, vitamins, phytosterol and etc. Mulberry leaf can decrease blood glucose,lower blood pressure and reduce blood lipid. It has effect on antioxidant function, coagulation mechanism and cancer prevention. It aiso improves immunity and influences anti - inflammation and detumescence action, nervous system and anti - aging function. The applications of mulberry leaf in medicine and food are explained further.
