微波干燥技术在食品工业中的应用研究

摘    要:微波干燥技术是一种应用在食品工业的快速脱水新技术。介绍了近年来微波干燥技术在谷类、果蔬和水产品等食品原料中的应用技术研究,分析了现状及存在的问题,提出了微波干燥技术在食品工业中的应用研究可能发展的方向。

Abstract:Microwave drying is a rapid dehydration technique that can be applied to food industry at present. The application of microwave drying technology to cereal, fruits and vegetables and aquatic product processing in recent years were introduced in this paper. Some problems exist in the applications were analyzed, and development trends of microwave drying technology in food industry were put forward.
