摘    要:我国香蕉资源丰富,但不耐贮藏,采后损失严重,卖蕉难问题突出.通过进行香蕉深加工与综合利用可使其多倍增值,发展潜力很大.本文介绍了不同产地香蕉的营养价值、保健功能以及香蕉资源的开发与利用的思路,及发展香蕉深加工食品应注意的问题.

Abstract:Banana is an abundant resource in China. However, the postharvest storage of banana has long been a problem. It is more and more difficult for the banana to sell and influence peasants' income and the sustainable development of banana industry seriously. It needs for processing to reduce losses and maximize the value of banana. The synthetic utilization of banana is therefore of great potential. The nutrition value of banana planted in different areas and its hygienic function are introduced, but also the proposal of utilizing the resources are put forward. Moreover, the problems that should be noticed while developing banana-processed foods are also discussed in this paper.
