多酚在白肋烟生长、采收、调制过程中的变化研究

摘    要:本文采用反相高效液相色谱法对2001年湖北白肋烟样品中7种多酚成分进行了定量分析,研究了白肋烟生长、采收、调制期间多酚含量变化的规律.结果发现,下部白肋烟的多酚含量在采收前已达到顶峰,上部白肋烟中的多酚在生长过程中逐渐积累,其含量在调制初期达到最高,超过中部和下部烟叶含量.调制开始3周内白肋烟中多酚含量急剧下降,减少80%以上,随后下降趋势变缓,不再发生剧烈变化.调制前绿原酸类成分在多酚中含量最高,芸香苷等成分次之,莨菪亭等成分最少;当调制结束时,芸香苷的含量在多酚中变为最高.此外,对绿原酸3种异构体在白肋烟生长、采收、调制期间的含量变化也进行了对比分析.

Abstract:The polyphenols in burley tobacco of Hefeng county, Hubei province, China in 2001 were analyzed by reverse phase high performance liquid chromatography(HPLC). Seven polyphenols in burley tobacco were quantitatively determined, i.e. neochlorogenic acid, chlorogenic acid, 4-o-caffeoylquinic acid, scoplin, scopoletin, rutin, kaempferol-3-rutinoside. Result shows that the amounts of polyphenols in lower stalk position reached the climax on the eve of harvesting, and the amounts of polyphenols in upper stalk position increased continuously during growing stage and the highest of amounts was observed in the early stage of curing. The amount of total polyphenols decreased sharply in the first 3 weeks of curing, more than 80% was lsot. The three isomers of chlorogenic acid were most abundant polyphenols in burley tobacco before curing, rutin compounds were the second highest polyphenols, however, rutin compounds predominated other polyphenols at the end of curing. there are differences among the levels of three isomers of chlorogenic acid in burley tobacco, the level of chlorogenic acid is higher than the other two isomers and the amount of neochrogenic acid is the lowest of the three isomers before curing.
