| Abstract: | The material composition for vinegar making from uncooked materials was optimized. Several technologies, such as high gravity fermentation technology in the production of alcohol, recycling technology of fermented grains in the production of liquors by solid-state fermentation, mixing Fuqu with uncooked materials and aging technology by multiple washing of fermented materials, were adopted successfully. |
