摘    要:戊糖乳杆菌是一种重要的乳酸菌,广泛存在于传统发酵食品中,其在食品工业中的应用潜力受到越来越多的关注。本文综述了戊糖乳杆菌的生理生化性质、生物学功能及其在功能食品开发、橄榄发酵食品和生物表面活性剂方面的研究进展,为加快戊糖乳杆菌在食品工业中的应用提供理论参考。

Abstract:As an important species of lactic acid bacteria, Lactobacillus pentosus is widely distributed in the traditional fermented food and its potential application has gained more attention in food industry. The physiological and biochemical characteristics, biological function and the application of L. pentosus in functional food, fermented olives and biosurfactant were reviewed, in order to provide reference for accelerating the development of L. pentosus in food industry.
