摘    要:红曲色素是由红曲霉发酵产生的天然色素。传统上红曲霉都是发酵大米生产红曲色素,近些年,随着研究的深入,小米、玉米、木薯、菠萝蜜籽等谷物及农工业废弃物都被用于红曲色素生产。文章简述了红曲色素的性质,对红曲霉发酵不同底物生产色素的研究进行了综述。

Abstract:Monascus pigment is a kind of natural ingredient produced by fermented Monascus sp. Traditionally Monascus was used as substrate for pigments production. In recent years, with the deepen development of research, the agro-industrial waste such as millet, corn, cassava and jackfruit seed were successfully utilized for the production of Monascus pigments. The properties of Monascus pigments were described and the investigation of different substrates fermented by Monascus for pigment production was reviewed in this paper.
