| 摘 要： | 运用BP神经网络对酒精的发酵过程进行建模并预测，所建立的模型能够比较精确地模拟菌体生长，底物浓度消耗，以及发酵酒精度等过程的变化。结果表明，基于BP神经网络酒精发酵过程的模拟与预测是实现酒精发酵在线监测的一种可行的手段。

| Abstract: | The method of back-propagation(BP) neural network was applied to model and predict the alcohol fermentation process.The model could accurately simulate the dynamic processes of cell growth,substrate consumption and alcohol yield.The results indicated that the model of alcohol fermentation process based on BP neural network could be a feasible way to monitor the alcohol fermentation online. |
