| 摘 要： | PCR-DGGE(polymerase chain reaction-denaturing gradient gel electrophoresis)技术即为聚合酶链式反应-变性梯度凝胶电泳技术.它具有快速、灵敏度高、重复性好等特点,越来越多地被应用于微生物群落结构分析与鉴定,其在白酒酿造过程中微生物的鉴定领域中崭露头角.文中主要就其在白酒中的应用进行介绍.

| Abstract: | PCR-DGGE(polymerase chain reaction-denaturing gradient gel electrophoresis), is a kind of rapid, high sensitivity and good repeatability technology. Due to its unique characteristic, it is widely applied to the analysis and identification of microbial community, for example in the area of Chinese liquor. This paper introduced some research progress in application of PCR-DGGE in Chinese liquor microbiology. |
