摘    要:火棘果实营养丰富,色素、果胶等含量高,具有很高的食用和药用价值,可以用于加工食品,提取天然色素、果胶等,具有广阔的开发利用前景。在相关文献报道的基础上,对火棘的营养成分、保健功能和综合加工利用的研究现状进行综述。

Abstract:Pyracantha fortuneana is rich in nutrition and it contains a lot of pigment and pectin,showing high edible and medicinal values.The research showed that they can be used in food processing industry for extracting pigment and pectin,which showed broad prospects of development and application.On the basis of related literatures,the nutritional value,health function and the research statues of comprehensive processing and utilization was summarized in the paper.
