摘    要:比较了15株乳酸菌的抗氧化能力,旨在筛选出高抗氧化活性的乳酸菌,为天然抗氧化剂的开发及乳酸菌在功能性食品中的应用提供理论依据。通过羟自由基清除试验、超氧阴离子自由基清除试验以及还原能力评价试验,系统评价了15株受试乳酸菌的菌体及其胞外分泌物的抗氧化能力。结果表明,抗氧化活性具有显著的菌株特异性。菌株L14(植物乳杆菌)在上述3种评价体系中均表现出最强的抗氧化能力,其次是菌株L15(唾液乳杆菌),表明这两株乳酸菌在减轻机体氧化损伤方面具有一定的应用价值。

Abstract:This study compared the anfioxidant capacity of 15 strains of lactic acid bacteria (LAB)in order to screen LAB with high antioxidative activity and provide a theoretical basis for the development of natural antioxidants and functional food fermented with LAB. Hydroxyl radical scavenging experiments, superoxide anion radical scavenging as- say and reduoing capacity evaluation experiments were used to systematically evaluate antioxidant capacity of LAB and their extracellular secretions. The results showed that the anfioxidant activity has significant strain-specific. Strain Llg (Lactobacillus plantarum) in the three evaluation system showed the strongest antioxidant capacity, followed by strain L15 (Lactobacillus salivarius),suggesting that the two strains have certain application value in alleviating oxidative damage.
