米渣和米糠蛋白的开发利用

摘    要:大米深加工副产物中,米渣和米糠的量最大,可利用价值最高。因其含有丰富的蛋白质而具有很大潜在的经济价值。利用现代科技手段对其进行开发和合理利用既可减少浪费又可创造更多价值,为农业经济发展带来新的增长点。对米渣和米糠蛋白营养成分、提取方法、蛋白改性、开发利用进行综述,对从事此项工作人员具有很好的参考意义。

Abstract:In the rice intensive processing by-product, is biggest take rice dregs and the rice bran as the quantity, may use the value to be highest. Because it includes the rich protein to have big the latent economic value. Carries on the development and the reasonable use using the modern science and technology method to it both may reduce the waste and to be possible to create more values, is the agricultural economy development brings the new point of growth. To rice dregs and the rice bran protein nutrient content, the extraction method, the protein modification, the development use carry on the summary, is engaged in this staff to have the very good reference significance.
