The modern roller-milling process for making flour is described as ＂gradual reduction process＂ because the grain and its parts are broken down in a succession of relatively gentle grinding states.This paper mainly emphasizes the importance of coarse middling system and purification system,to provide as more and pure a state as possible,both of them should correspond with own function before reducing the particles into a fine flour for preceding reduction system as well as grading system.
