摘    要:姜油是从生姜中提取的香精油,具有良好的抗氧化能力。在阐述了姜油化学成分的基础上,重点综述了姜油的提取方法、姜油的抗氧化活性以及影响其活性的有关因素。

Abstract:Ginger oil is some essential oil extracted from ginger, and has high antioxidative activity. After its chemical components being described,its extract methods and antioxidative activity as well as relative factors affecting its antioxidation were main reviewed in the paper. The future of developing and utilizing this natural antioxidant was also discussed.
