油脂脱色过程中吸附剂对色素及微量成分的影响

摘    要:油脂脱色过程是食用植物油加工的重要过程,它不仅对色素起到脱除作用,同时对油脂TOTOX值、磷、皂、生育酚都产生重要影响,这也是影响油脂品质的重要因素.研究发现,不同吸附剂对油脂脱色过程色素、磷、皂具有明显的差异,同时在TOTOX值变化也具有明显不同,这也表明油脂脱色过程对油脂品质、氧化稳定性都具有重要影响.

Abstract:Bleaching is an essential process in edible oil processing.The target of bleaching process is not only to get rid of some pigment,but to lower TOTOX value,phosphorous content and soap content of oils.These factors are all essential to edible oil quality.As the research results show,different adsorbents have different effect on pigment,phosphorous and soaps during bleaching process,and also they possess different effects on TOTOX value of oils.It shows that bleaching process can create apparent effects on oil quality and stability.
