油菜籽皮中原花青素的提取及稳定性分析

摘    要:以油菜籽皮为原料,采用乙醇作为提取剂提取原花青素,研究了料液比、乙醇体积分数、浸提时间3个因素对原花青素提取效果的影响,同时对原花青素稳定性做了研究。试验得出油菜籽皮中原花青素最佳提取条件为:料液比1∶7,乙醇体积分数70%,浸提时间60 min。最佳条件下原花青素得率为2.90%。温度和pH均不同程度地影响原花青素的稳定性。温度对原花青素稳定性影响较明显,尤其是高温条件下,原花青素稳定性明显降低;在pH小于9时原花青素稳定,pH高于9时,其稳定性明显下降。

Abstract:The extraction of procyanidins from rapeseed hull by ethanol was studied.The effects on yield of procyanidins of three factors such as ratio of solid to liquid,volume fraction of solvent and extraction time were investigated.In addition,the stability of the procyanidins was reseached.The results showed that the optimum conditions were determined as follows:solid-liquid ratio 1∶ 7,volume fraction of ethanol 70%,extraction time 60 min.Under the optimum conditions,the yield of procyanidins was 2.90%.The procyanidins from rapeseed hull was very sensitive to temperature and pH.The stability of procyanidins was quickly decreased at higher temperature.Whereas with the increase of pH value,the procyanidins was stable when pH was below 9,and the stability was quickly decreased when pH was above 9.
