| 摘 要： | 描述了微胶囊化粉末油脂制品结团及流动性不佳的原因 ,介绍了几种食品加工用抗结剂的名称、物性以及它们抗结或改善粉末制品流动性的机理 ,指出可以通过添加抗结剂的方法来改善微胶囊化粉末油脂制品的流动性和抗结性。

| Abstract: | This study describes the reasons of flowing not good and caking of the products of microencapsulated powdered oil,introduces the names and the physical qualities of some kinds of anticaking agents in the food process,explains the mechanics of anticaking or improving the flowability of powder products of the anticaking agents,points out that we can improve the abilities of folwing and anticaking of microencapsulated powdered oil by adding the anticaking agents to them. |
