核桃油体外清除自由基活性的研究

摘    要:利用有机溶剂浸出法制备核桃毛油并经精炼得到精制核桃油,采用邻苯三酚自氧化反应测定核桃油的体外抗氧化活性。试验结果表明:核桃油对O2-的最大抑制率可达53.3%,花生油、大豆油分别为47.7%和22.8%,因此核桃油相比于其他两种植物油有较好的清除超氧自由基的能力。

Abstract:The walnut oil was produced by solvent extraction and refined by conventional refining technology,then the vitro antioxidant activity of walnut oil was measured by the self - oxidation reaction of pyrograllol. The results indicated that the maximum inhibition rate of walnut oil to O-2 was 53.3% while that of peanut oil and soybean oil were 47.7% and 22.8%,respectively. The ab ility of walnut oil to eliminate super oxide free radical is comparably better than that of the other plant oils.
