烘烤环境条件对烟叶内在品质的影响

摘    要:用电热式温湿度自控烤烟箱,研究了烘烤温湿度条件对烟叶品质的影响。结果表明,变黄阶段的温度和湿度对烟叶内在物质的转化和质量形成影响最大,其中湿度的影响更大。以36~38℃的温度、34~36℃的湿球温度使烟叶变黄,然后升温到54℃,并控制湿球温度38~39℃定色,干筋温度67℃,淀粉降解彻底,还原糖、Amadori有关的氨基酸含量较高,评吸结果最好。

Abstract:The effect of different temperature and humidity conditions on the inherent quality of fluecured tobacco leaf during curing was studied by using the electric heating curing apparatus in which the temperature and humidity were automatically controlled.The results showed that yellowing temperature and humidity had the most significant effect on the material transition and the inherent quality of the cured leaves,and the effect of humidity was more significant.When temperature was3638 and wetbulb temperature was 3436,the leaves began yellowing,then increasing temperature to 54 and keeping wetbulb temperature at 3839 for leaf drying,and at 67 for vein drying.Under this curing condition,starch was degraded completely,reducing sugar content and amino acid related to Amadori content were higher,the result of smoking was the best.
