摘    要:为寻找鱼糜废水中鱼浆蛋白的优化回收方法,实现鱼糜废水净化及蛋白回收再利用的双重目的,对鱼糜废水中蛋白质的等电沉淀规律进行了研究。在初步了解鱼糜废水中蛋白成分性质的前提下,考察了不同pH、酸种类、离子强度下的蛋白质沉淀规律,并尝试采用分级等电沉淀方法提高蛋白总回收率。结果表明,鱼浆蛋白成分的等电点主要密集分布在4.3和5.9两个位置;多元酸的沉淀效果较优,离子强度提高也有促进蛋白沉淀作用;分级等电沉淀可将蛋白总回收率从传统方法60%左右高至74.36%。本研究所做的基础研究及提出的分级等电沉淀技术思路,将为蛋白沉淀回收技术基础理论的丰富和思路的开拓提供有益补充。

Abstract:In order to explore optimal methods of protein recovery from surimi wastewater and purify the wastewater,isoelectric precipition of proteins in surimi wastewater was studied.After properties such as pI values of proteins in surimi wastewater were determinated firstly,protein precipition was investigated varying pH,acid type and ionic strength.And then fractional isoelectric precipitation was tried to increase total recovery of protein.Results showed that pI values were near the points 4.3 and 5.9 respectively.Polybasic acid and higher ionic strength increasing were of advantage to precipition.And 74.36% recovery was obtained by fractional isoelectric precipitation,which was higher than traditional method with recovery above 60%.All the results supplied basic data to protein recovery technology,and broadened considerations for protein recovery and wastewater purification.
