生物合成γ-氨基丁酸的乳酸菌的筛选

摘    要:γ-氨基丁酸(GABA)具有降血压、提高脑活力、改善更年期综合症等生理活性,GABA的生物合成主要采用大肠杆菌为菌种。通过筛选微生物,尝试利用乳酸菌生物合成γ-氨基丁酸,得到一株食品安全(GRAS)乳酸菌SYFS1.009,利用该菌株表现出较高的合成GABA活性,通过发酵技术可以获得较高含量的γ-氨基丁酸产品。

Abstract:Amino Butyric Acid (GABA) has shown anti-hypertensive activities and is regarded to improve conditions like climacteric psychosis and depression. E. coli is the microorganism commonly used for biosynthesis of GABA. Recently there is an increasing interest in preparation of GABA enriched foods. In this paper, a GRAS lactic acid bacterium, SYFS1 009,was screened for its high GABA production and was tentatively applied for preparing GABA products. Powder containing about 5%GABA was obtained using SYFS1 009 by fermentation process.
