| 摘 要： | 介绍了电子鼻的工作原理,基本组成和发展历程。综述了电子鼻在乳品工业中的应用进展,特别是在乳制品成熟时间和货架期的预测、挥发性物质的分析、微生物的分类,干酪种类的分类和乳制品产地的区分等方面。展望了电子鼻在乳品工业中的应用前景。 |

| Abstract: | The principle, constituents and history of electronic nose were introduced in this paper. The applications of electronic nose in dairy industry were described, focus on the maturity prediction and the shelf-life prediction of dairy products, such as the analysis of volatiles in dairy products, the classification of microorganisms, cheese and the geographical origin. The futures application of electronic nose in dairy industry were prospected. |
