微波辐射强化蔗糖提取过程及其机理研究

摘    要:采用微波辐射法来强化甘蔗中蔗糖分的提取过程 ,结果表明 ,微波平均辐射功率及辐射时间的增加均有利于蔗糖分的提取 ;甘蔗片厚度越厚 ,微波影响强化提取效果越小 ,不过 ,其影响程度不及对传统加热提取方法严重。通过拍摄甘蔗细胞的显微照片发现 ,微波辐射使甘蔗中的部分细胞破裂 ,加快蔗糖向提取溶剂扩散 ,从而提高提取效率。

Abstract:Microwave enhanced extraction of sugar from sugar cane was investigated. It was found that more sugar was extracted with the increase in the average output power of microwave and the irradiation time, and the thicker the sliced canes extracted are, the slower the diffusion rate of sugar, but the thickness influenced less to the diffusion efficiency by microwave than by conventional heating. The micrographs of the sugar cane cells showed that the cellular structures of sugar cane ruptured during microwave irradiation,which resulted in the fast releasing of the sugar into the surrounding solvent, so that the diffusion efficiency was increased.
