微生物脂肪酶的应用

摘    要:微生物脂肪酶主要来源于真菌和细菌 ,它们不但能催化脂水解反应而且能催化长链脂肪酸甘油酯的合成反应 ,并且具有高底物专一性、区域选择性和对映选择性 ,被广泛应用于油脂、食品、医药、化妆品、洗涤剂、香料和其它有机合成领域。本文综述了脂肪酶在油脂、食品等诸多工业领域的应用。

Abstract:Lipases are secreted into the culture medium by bacteria and fungi They catalyze not only the hydrolysis but also the synthesis of long chain acylglycerols with high substrate specificity, rigioselectivity and stereoselectivity Lipase can be employed in the production of lipids, food ingredients, pharmaceuticals, cosmetics, detergents, perfumery and other organic synthetic materials?. It will be exciting to witness the future developments in basic research as well as biotechnological applications of these versatile microbial enzymes
