酶法提取黑木耳多糖

摘    要:研究了酶法提取黑木耳多糖的最佳工艺条件。以提取率为指标,分别考察了浸提剂倍数、酶解pH、温度、时间、加酶量对果胶酶或纤维素酶酶解反应的影响。试验确定了果胶酶酶解木耳的最佳工艺条件:浸提剂倍数50,pH5.0,温度55℃,时间80min,酶加量1.1%,在此条件下,黑木耳多糖的提取率为4.15%;纤维素酶酶解木耳的最佳工艺条件:浸提剂倍数50,pH5.0,温度50℃,时间80min,酶加量为1.3%,黑木耳多糖的提取率为4.71%。

Abstract:Auricularia auricular polysaccharides was extracted from pretreated Auricularia auricular by enzymatic hydrolysis. The optimum enzymatic hydrolytic conditions were also determined. The optimum hydrolytic conditions of pectinex were determined as follows enzyme 1.1%, pH 5.0, buffer to raw material ratio 50, temperdure 55℃, and reaction time 80min. Under these conditions, the polysaccharides extraction rate was 4.15%. The optimum hydrolytic conditions of celluase were also investigated and identified enzyme 1.3%, pH 5.0, buffer to raw material ratio 50, temperature 50℃, reaction time 80 min. Under these conditions, the polysaccharides extraction rate was 4.71%.
