嗜酸乳杆菌的培养条件及其生物学特性

摘    要:对嗜酸乳杆菌的培养条件及其生物量、产酸、耐酸、抗胆盐、世代繁殖和抑菌特性的影响做了初步研究。结果表明,最适生长温度为36~38℃,最适起始pH为5 5~6 2 ,静置培养比振荡培养好,最高生物量和滴定酸度分别可达10 10 CFU/mL和2 19°T。同时嗜酸乳杆菌具有强耐酸性和耐胆盐性,对大肠杆菌和沙门氏菌有很强的抑菌作用。

Abstract:The incubating conditions of Lactobacillus acidophilus and its characteristics including biomass, producing acid, rejecting acid, salt, the growth age and antagonistic properties were studied. Our results showed that the optimum growth temperature of Lactobacillus acidophilus falls in the range of 36℃ to 38℃ and the initial pH was 5.5 to 6.2. Lactobacillus acidophilus grew well without shaking. In our study, biomass reaches up to 10 10 CFU/mL at its highest and the acid degree reaches 219°T. Lactobacillus acidophilus had strong resistance to acid and salt. It had antagonistic impact on the growth of Escherichia coli and Salmonella sp.
