| Abstract: | Concerned with the lactic acid bacteria exopolysaccharide , the review touched upon the parts of the EPS production strains, the pathway and genetic adjusting and controlling of EPS biosynthesis, isolation and purification, EPS yield and its physiological functions. The prospects of EPS development and application were also mentioned. |
