摘    要:以玉米淀粉为原料,硬脂酸为酯化剂,用双螺杆挤压机作反应器制备了硬脂酸玉米淀粉酯.对硬脂酸玉米淀粉酯的黏度、稳定性、溶解度、糊化度、乳化特性和消化性等性质进行了测定和分析.

Abstract:Corn starch stearate was prepared from corn starch as raw material by a twin-screw extruder and with help of stearic acid as an esterifying agent.The properties of corn starch stearate such as viscosity,stability,solubility,gelatinization degree,emulsibility,digestibility and so on,were determined and analyzed.
