摘    要:采用小麦籽粒湿法分离淀粉技术,分离提取河南省种植的36种小麦和4种国外商品小麦的淀粉,计算出淀粉提取率.小麦淀粉提取率与品种有关;分析了这些淀粉样品的水分、脂类、蛋白质和直链淀粉含量,采用快速粘度分析仪(RVA)测定淀粉糊特性,测定了淀粉糊流变学特性,进行了回归分析和聚类分析,以淀粉的流变学特性为基础,进行了分类对比。发现安农98005与澳洲商品软麦具有相近的淀粉特性。

Abstract:Wheat starches were extracted from 36 wheat cultivars produced in Henan Province and 4 varieties of imported commercial wheat through wet milling. Based on calculating starch extraction rate, wheat starch extraction rate was found to be related with the wheat cultivar. The contents of moisture, lipids, protein and amylose of the wheat starches were measured. The pasting properties were measured by a rapid viscosity analyzer (RVA), and the rheological properties were measured and analyzed by means of regression analysis and cluster analysis. Classification and comparison were made on the basis of starch reological properties. Both the cultivars of Annong 98005 and the Australian soft wheat exhibited similar starch characteristics.
