| 摘 要： | 对伏马毒素的化学组成、毒性,以及在粮谷类食品中的分布、伏马毒素的限量标准和检测方法现状进行了综述,分析了各种检测方法的特点,就我国粮谷类食品中伏马毒素限量和标准检测方法的制定提出了建议.

| Abstract: | A brief summarization on fumonisins was given in respects of the chemical constructions,the toxicity,the status of distribution in cereal foods,limit standards and determination methods,as well as the comparison on the characteristics of various determination methods.Besides,the suggestions on the establishment of limit standards and standard determination methods for fumonisins in cereal foods in China were put forward accordingly. |
