电导率法检测原料乳掺假的方法研究

摘    要:研究了使用电导率法检测原料乳中掺假的方法,根据乳中掺入电解质时电导率有显著增大、掺乳非电解质时电导率有显著减小的特性,使用电导率仪测定待检乳样的电导率,根据一定温度下电导率值与该温度下正常乳样的电导率对比,有显著差异的判定为乳样中有掺假物。此法具有成本低廉,操作方便快捷,检验时间短等特点,为快速定性检测方法,可以在线应用,适用于乳品企业进行原料乳掺假的快速检测。

Abstract:According to the research formerly, the conductivity significantly will increase when mixing electrolyte in the milk, and will reduce when non-electrolyte in the milk. Based on this characteristic, conductometric method was used to measure the conductivity of milk samples. Then compared the conductivity of experimental group with that of control under certain temperature, significant differences were found in milk samples, and thus be approved as adulterated milk. Conductometric method is low-cost, convenient, and time saving. Therefore, it can he used for the rapid qualitative detection methods. The method is suitable for dairy enterprises to detect adulterated milk by on-line application.
